GEOGRAPHICAL POSITION OF THE GRAPES: area bounded by the production regulations in the hilly area of Frascati.

NAME OF THE VINEYARD: Vallechiesa.

SOIL: Volcanic.

EXPOSURE: South.

WINE-GROWING METHOD: rows with rammed cordon.

YIELD PER HECTARE: 7 tons.

GRAPE HARVEST: hand-picked – from mid-September.

WINE-MAKING: the grapes are destemmed and subjected to soft pressing, prolonged cold maceration of the skins (10°C for 12/16 hours), aging on the fine lees for 5/6 months, use of only native yeasts.

AGING AND REFINING: 2/3 months in bottle.

COLOUR: bright straw yellow with golden reflections

SMELL: intense floral and fruity aromas: jasmine, gentian and broom, peach, plum and citrus scents.

TASTE: aromatic herbs and mineral notes. Fresh, savory and pleasantly drinkable.

PERSISTENCE: good

SERVE WITH: ombrina fillets sautéed with ginger and julienne potatoes, baked fish, lemon and shrimp risotto, medium-sized first courses, white meats.
